Avocado on chia protein bread


Ingredients: 1 avocado, salt, pepper, buttermilk 

For the bread: 6 eggs, 500 g low-fat curd cheese, 100 g grated almonds, 100 g ground flaxseed, 4 tablespoons chia seeds, 4 tablespoons pumpkin seed flour (or flaxseed flour), 1 pack of baking powder, 10 g bread spices (made from 2 tablespoons anise, 2 tablespoons caraway, 2 tablespoons coriander and 2 tablespoons fennel), 1 teaspoon salt (seeds optionally for sprinkling) 

Mix all ingredients together, place in a loaf pan lined with baking paper and smooth the top. Let the dough rest for about half an hour. Then sprinkle with pumpkin seeds, flax seeds, oat flakes, sesame seeds, poppy seeds or sunflower seeds as desired and then bake on top and bottom heat at 175 degrees for about an hour. Cut the cooled bread into slices and cover with avocado slices. Sprinkle with salt and pepper from the mill and serve with a glass of buttermilk.
